It was s3, look at crystal emp. part 1 when Celestia and Luna are staring at the glass windows up to when Twilight accepts the quest.
I remember I was super emotional with the beautiful art, and then Twilight start sing a sad song. There were no ice cream to be found in a kilometer radius.
Not just that - the backgrounds I think are the biggest change. Fantastically better/more detailed, and we got upgraded lighting/shading for the first time in I think season 3 or 4? Wasn’t there all the time, but we’ve never had this kind of lighting stuff in seasons 1 or 2:

Yeah, the eyes seem more expressive, and such.
Even animated ones done by large teams. MLP’s animation has drastically improved since season 1.
It’s kinda interesting how cartoons evolve over the years.
