You base that on what, exactly? If a gender-flip spell is hard, how about changing a poy into a potted plant?
 
Twilight is incredibly powerful. She even managed a bit of the age spell in Magic Duel, just not the entirety.

Alternatively, dragons are easier to age. Actually, given that Spike can adjust his own age, I’m not sure if Twilight was altering his age or just shocking Spike into changing his age himself.
