Yes but the Twilight in season 5 couldn’t exist with the memories and past she had couldn’t. The Twilight who failed her entrance exam would exist still but the Twilight we know in the show couldn’t because she never passed the exam, so she never went to Ponyville, so she never finished Starswirl’s spell to become an Alicorn. Thus in preventing that one event Twilight would disappear because she never got to the point of how she exists now. Her life unfolded completely different.

…but wouldn’t Twilight still exist as a unicorn (or would she have perished in whatever apocalypse created the ashlands, in which case she would disappear)?

Well if Twilight was prevented from becoming an alicorn the Twilight that became an alicorn and lived up to that point would cease to exist because the events leading up to that point never happened.

Whether there are survivors or not could make very different stories. It could be one where she is the only remaining sentient life. In that, you could choose that she is magically sustained forever or that she dies of starvation if there isn’t even any greenery left within a day’s gallop. Perhaps only Equestria itself is destroyed and she could find refuge in the Crystal Empire or among the kirins or yaks if she can survive until she finds them.

You might be right, it’d be a bit grim/sad/dark, but interesting. Especially, Starlight desparately trying to look for any survivors, and/or a way to go back, and fix things.

this would make an awesome fanfiction. To see it fleshed out, and to see how Starlight deals with the world she created and the guilt of what she did.

Starlight tears the scroll in half, “Now you’ll never get your friends back!” blasts Rainbow Dash with magic stopping the race.
 
Time portal opens
 
“I’m not facing this future alone!” Twilight grabs Starlight and pulls her into the portal.
 
Starlight looks around sees a burnt destroyed wasteland, “Where are we!”
 
“I already told you the future or present what you were doing did this to Equestria!” Twilight shouted, “And now there’s no way to undo it!”
 
Starlight hesitated, “No this isn’t my fault how could you and your friends be so important!”
 
Spike stepped up, “Because they saved Equestria many times and you prevented them from doing it Nightmare Moon, Discord, the Changelings and Chrysalis, King Sombra, those black vines and Tirek all of them were able to be free and look what that caused!”
 
Starlight looks around again, “I-I but no they can’t-“
 
“Enough!” Spike shouted “When will you realize you destroyed all Equestria. Right Twi….light?” Spike sees he and Twilight are fading away
 
“Wh-what’s going on?” Starlight asked
 
Twilight closed her eyes, “You prevented me from becoming a an alicorn so I now can no longer exist and because I never hatched Spike he will cease to exist as well. Goodbye Starlight Glimmer enjoy the world you created.” Both disappear
