Yep, any one thing you want. The rules are a bit lax, like you could string things together to become one thing, but you don’t want to abuse the rules too much out of fear of what she might retaliate with if you get the riddle wrong :D

Yeah, bunyips especially are not a commonly known one. It’s one of the nicer “nasty things” from Aussie mythology.
It’s part of the reason I wanted to ponify an alp-luachra, was I wanted to touch on something that’s never really gotten much attention. I’m glad too that MLP itself loves to use more obscure creatures, like how much you want to bet most viewers of the show first heard of things like Ahuizotl, the Bunyip, and Cipactli when they appeared in the show? :D
Oh I know, but we still need to look into others. In fact we barely see any Norse or Celtic.
