Pinkie’s called her “Dashie,” and such before though.
I remember an early fanon where the Apple family had their family name first (like the Japanese do). So that’s why they are called Applejack, Apple Bloom, etc.
I mean as people don’t usually referred two people as their full names and last they need to be exact who they’re talking to. In real life some people do have double names as first namesalso even some of the names that could have sounded like last names had something to contradict like how Granny Smith is the only one who was referred to as a Smith
Rainbow Dash is often referred to as just “Rainbow” by Twilight. This is an interesting contrast to the fans which use “Dash” more often (and this often ends up in fanfics because of that).

Plus it’d be kinda odd with names like “Twilight Sparkle,” “Rainbow Dash,” “Trixie Lulamoon,” “Octavia Melody,” “Derpy Doo/Hooves.”

Sometimes they have accidentally put fanon in the merch’.
I sometimes wonder if things like “Derpy is a mailpony” were done, because newer writers/editors/ect., and such when researching the characters accidentally mixed fanon with canon.

Well, it could have made it because someone wanted to deliberately reference the fanon or by accident. Maybe on a card or something. But I think I have seen it used officially at least once.
if they did have last names it would be weird that they keep saying them all the time.
I never saw it, but I think that’s fanon, Ponies don’t exactly have “shared last names.”
I don’t know. I feel like over the years it has made it to at least one piece of official merchandise.
To be honest it’s never been cleaned if the characters actually have last names
