There’s a perk you can take the clothes a person is currently wearing and they won’t notice.
You can steal just about anything in Skyrim. If your Stealth and Pickpocket skills are at the skill cap (100), you can succeed at stealing the armor and weapons of somebody while you’re fighting them. You can steal the briar-heart right out of a Briar-Heart’s chest. They will, of course, keel over dead immediately afterward.
