Why do you think this McLaren can pull away when they go flat out and start at the same speed (meaning it's not about aero), especially when that particular Mustang has 900 horsepower while the McLaren has 710? It's the suspension. Poor suspension setup wastes power into spring deformation and chassis deformation. That's why.
