If the Pears and Apples were from the 1920s, the Pears would probably rather die than drink a sip of alchohal. Whereas the Apples would probably be ~~bootlickers~~ bootleggers.
To me Pears seem more mild mannered and calm. Probably considered more cultured and intellectual too. They keep to themselves a lot more and avoid danger and risk. And they aren't known for expressing their true feelings of love publicly.
Whereas Apples seem more outgoing and freewheeling. They can be brash and loud. But more friendly to others.
The Pears probably actually take things like a good education and table manners seriously whereas the Apples would prefer to act on impulse.
It's why Big Mac sometimes had a hard time getting along with the other Apples at times since he was more reserved and even poetic.
Also last headcanon: I see the Pears as Yankees. And the Apples as Southerners.
