Is there even a tag for ruby pinch’s butt here? I tried every possible tag there was none so I went with pinch butt.

Butt tags aren’t for images where the butt isn’t a focus. On the standard butt tags (example), it says as much. A butt tag is definitely not warranted on screencaps where a butt just happens to be in view. In the other case, I’m not sure a guardbutt tag would get enough use to create a tag, though it would probably warrant one.

I don’t think we need a specific tag for every possible character’s butt, either…

Not sure what’s to explain there. Applesauce (and aliased alternate spelling apple sauce) is sauce made from apples. And applesauce pony is a pony made from applesauce.

Does it count that the butt of a character is shown but the scene is in front of the character?

I’m not exactly sure what you’re saying. An example would probably be helpful.  
If this is related to the discussion from the other day, then the answer is probably no. To get one of those character butt tags, it actually has to be central to the image or emphasized in some way. Not sure about the main plot, butt, and ass tags.
