I can’t speak for Blood Omen 1 since I haven’t played it, but as for the rest, I can say they’re pretty good.
 
Soul Reaver 1’s combat is kinda finicky but serviceable, while the platforming sections suffer from a lot of the same issues as most early 3d platformers, poor camera controls and dodgy ledge grabbing mechanics being the first few that come to mind. It’s real strengths are in the storytelling, voice-acting, and atmosphere.
 
Soul Reaver 2 smoothed out the gameplay issues of SR1 to some extent, from what I’ve seen so far, but I haven’t played a whole lot of it yet so I don’t feel I can comment on it too much.
 
Blood Omen 2’s combat can feel repetitive, and the bossfights are seriously underwhelming, but the story and setting are worth it in my opinion, as you get to see Nosgoth in it’s prime instead of the post apocalyptic, mutant vampire infested wastes of Soul Reaver.
 
As for Defiance, I can say very little. I only played five minutes in before determining that my piece of shit laptop was going to chug like a cottage cheese martini the whole time and there was nothing I could do for it. It has a fixed camera. That’s all I really know.
