Tremble here is the most normal of them, being a natural species of Equestria and your most basic garden-variety goo pony. Their species is, by nature, simple-minded and unaggressive because they are strictly herbivores that prefer sweet foods, while their resilient body means most creatures can’t even harm them. She has a constant consistency like thick pudding.
Quiddity, true to her name, is an oddball member of a parasitic slime species. Essentially she’s a slime monster that has somehow developed sentience and basically thinks it’s a goo pony. Her species is much more aggressive and dangerous (especially to males, wink wink safe image click her tag and you’ll see) although she’s not by nature a bad creature: she just doesn’t know any better. She has a runnier consistency than Tremble because she’s not as adept at holding a shape than Tremble. She also has a genuine loving fondness of babies and children.
Abominapple here doesn’t count because she’s not a species per se, but a clone of Applejack that shares less than 5% DNA. She has no natural instinctive behaviors at all, and was instead trained to act a specific way by her creator Twilight.
As for Meltavia here, nobody knows what the hell she even is or where she came from, not even her. Her consistency is much thicker, like peanut butter, and different parts of her body have different pigments meaning she’s able to flawlessly imitate a regular pony.
All goo ponies share the same affinity for engulfing loved ones as well as clinging to solid objects to rest (so when put with a solid loved one they become cuddlefiends) as well as a natural attraction to sources of warmth. They also have a natural aversion to bodies of water and even rainfall: since their bodies readily absorb fluids a harsh enough dumping of water could actually be fatal for them.

Heh, I tend to draw ponies much bigger than others. I’m just fond of the size difference. The only time I don’t is for POVs because I like to make more of the pony visible.

She’s just used to masquerading as a regular pony and isn’t quite used to having a companion who actually knows about and likes her odd body. Having herself all around him like that and feeling his hand slowly sink into her cheek as she relaxes and looses consistency is a sensation she’s not quite accustomed.

They have a default subconscious form, though it can change in time to corrospond with changes to their behavior, personality, acquired habits, etc. They can reshape at will to assume other shapes, but it’s akin to one of us deciding to hop everywhere on one leg instead of walk: easy to do, but tiring and takes conscious effort to do.
Oh, but there’s one concern for me… Does meltavia stain floors, carpets, wall, ceilings or the like? As lovely it would be to cuddle with her, I’d rather not like to clean up after her, and I doubt she would either.
