One possible reason for why Princess Cadance is referred to as such rather than Empress Cadance could be similar to how Queen Victoria was styled and titled after the Empire of India was declared as a distinct but integrated part of the British realm, since the part of Victoria’s title declaring her Queenship over the UK and Ireland holds precedence over her title as Empress of India, essentially making her formally recognized as Her Majesty Queen Victoria.
That said, it does seem pretty plausible that she’s formally recognized as a princess simply so she would stand equal with the Royal Sisters, and they in turn would be equal to Cadance.
