It’s more of an aura that introduces movement than something that acts like a force field and I assume liquids or liquid like substances are difficult to handle with levitation and she doesn’t want to squish the eclair either. All this takes concentration which is difficult while you are eating an eclair.
 
Also Celestia has magic performance anxiety.

Couldn’t she just hold the cream in with her magic? She’s already got her aura wrapped entirely around the eclair.
