I wanted each character to be with someone different. Plus Rainbow Dash tends to bring out the worst in her fellow main characters, so I’d never personally put her with one of them.

Only CheesePie and Discoshy makes sense. Aj and Dash are most likely lesbian so the male partner is unlikely. Rarity already burned all bridges with BB in S1. At best it would be Trenderhoof. Twilight obviously would never date a kid or a super fan who can’t stand equal to her. Celestia, Shadowlock or even Discord are more on her level.

What about Spike ? He would treat Rarity much better than Blueblood, I think we all knew this.

I agree that Applejack probably doesn’t have much time for dating, so if she likes a guy, she probably just immediately considers whether they could get married. And Rockhoof, being from an older, simpler, would probably be totally okay with that.

Princess Twilight X Star tracker: She has very little chance, because Twilight would concentrate more on making friends and would be busy strengthening friendships than having a romantic relationship. (At least the first decades).
 
Applejack X Rockhoof: Honestly, it seems that they are for each other, also it has been noted that Applejack has some fixation for horses that are strong (But it is supposed to have a relationship with RD, but it has not been confirmed, however , it is known that AJ is always working and may not have time for a romantic relationship.)
 
RD X Zephyr: Honestly, very little chance, because they are incompatible, but I like those types of couples, since it would be a great irony. (Also, remember that Lisa Simpson married Milhouse).
