It was less fierce than you think. Despite the Alchemist having only 1 Attack dice, she also has a sickle which grants her +1 Attack Dice vs Plants (and the Twisted Pumpkin is a Plant). The player also used the Potion of Aggression on her, for +2 Attack Dice for 4 Turn so then she just walked up to the plant and sliced it up
