I think alternate versions can be AUs and headcanons too. But AU is more different from сanon than headcanon

The two are by no means mutually exclusive. An AU is a much broader-scale headcanon than an individual character, as implied by the term “alternate universe.”
 
Mind you, there aren’t hard and fast definitions for the terms. This is just me disagreeing with yours.

Also, AU doesn’t mean what you think it means.

Headcanon is when you create a fact that fits (or doesn’t) within your interpretation of the show, whether it fits with the shows’s canon (or general) or not.
 
An AU is when you’ve created an entirely alternative version of the setting, characters, timeline, etc…

…someone actually thinks like that?
