The two are by no means mutually exclusive. An AU is a much broader-scale headcanon than an individual character, as implied by the term “alternate universe.”
Mind you, there aren’t hard and fast definitions for the terms. This is just me disagreeing with yours.

“Sudan doesn’t even exist in her universe” Yup, that’s why we have French haute couture and Dutch apple pie in the show. Oh wait, by S1 canon they actually DO exist, author just went full pot kettle black thinking his headcanon is somehow “canon”.
Headcanon is when you create a fact that fits (or doesn’t) within your interpretation of the show, whether it fits with the shows’s canon (or general) or not.
An AU is when you’ve created an entirely alternative version of the setting, characters, timeline, etc…
