it might be cause of mutations in their dna, mainly their pigment(cells that gives skin, hair and eyes(iris) their distinct hue) that governs what type of color that each pony has on their body that’re exposed to the outside air, this might start to happen to an egg inside the mother when it’s starting to develop in womb after fertilization when the sperm entered the egg.

It is never necessary for colors to follow genetics in MLP. They don’t need to be consistent. That’s only a thing us fans enforce into this universe. No crew of the show ever said that’s how their genetics works.
I think it’s better and makes more sense that colors are different between parents and children because it’s what makes the ponies so colorful. Equestria wouldn’t be as colorful if blue ponies always give birth to blue ponies and yellow ponies always give birth to yellow ponies.

That was the last generation, this time they could have been consistent regarding the colors of the parents and children, unless Sunny is adopted.

why is tiw purple when her parents are gray and blue? why is pinkie pie pink when her parents are brown and gray? dont question these things

Sunny is the only pony in the G5 so far who has parents mentioned or shown onscreen. There’s no way the other G5 Main characters besides Sunny could have parents at this point (at least not at the certain moment).
