They didn’t actually forget her ears. Not that many times. It’s not the animation error per se.

It’s implied that her ears are hidden or pinned under her mane. :)

If you watch early trailers, you can see her ears, but they look strange: clipping throgh hair, like in some cheap 3D game.

Instead of thinking what to do with her mane to make it go around the ears, they decided to simply remove the ears, and imply they are under her hair.

They probably had a deadline to meet, and didn’t have time to do anything else.

Theoretically, they could fix it in chapter 3… or make this a part of Jazz’s character like derpy eyes for Derpy! :)
