Sorry for pointing out the obvious, popularity is not the only factors that determine your custom pony sale and market value.
Your craftsmanship in fabricating custom that display the aesthetic essence of the character is the deciding factors whether the buyers are willing to pay big buck to purchase your crafts.
Here are some crafts that had attained such quality. This is just a personal verdict
The financial viability of making one character or another isn’t solely determined by craftsmanship. Trust me; I’ve sold tons of custom Lunas faster and for more money than even I thought reasonable, while I’ve had Celestias that I made at the same time and were equal in quality collect dust in storage even as I dropped prices. Craftsmanship is only a fraction of the equation. As much as I’d just like to make whatever suits my whim at a given moment, that won’t keep the bills paid or feed my kid. I take a lot of commissions as it is, so when I do get a little free time to work on something crazy, it needs to be marketable.
Besides that, comparing my stuff to artisan crafts like earthenpony is a little apples to oranges. Since I do customized toys, rather than fully hand-crafted ponies like a lot of the ones you posted, I’m a little more limited in terms of the viability of really dynamic poses or certain characters (though I can still pull off some very impressive customs).
Plane ponies are appealing because they’d be challenging, look amazing, and I’m in a unique position to make them since I’m now working with a 3D printer and could conceivably make printed wings and tails for them. But that’s an investment of time and money that’s hard to make when it’s just a side project and not a paid commission. The other characters mentioned like Dispersion and Silverlay would be an easier investment, cheaper to make and cheaper to sell, but they wouldn’t be as much fun.

No, it’s not selfish to want to see your OC as a toy (It’s only selfish if you think artists should do it for free :P) I really do like making one-off customs of people’s OCs much more than making a bunch of really popular OCs, because it means so much to their creators when I do. But that’s usually just by commission.
