She is also the princess of magic
She is potentially the princess of many things seeing as how their world if full of magic
As such, her domain is anywhere and EVERYWHERE that the power of Friendship exists - which is basically everywhere. Her domain is therefore at the very least the entire planet that Equestria is located on.
