Agreed. Not just with pony mixed couples but it would be interesting to see ponies pairing up with non-pony partners too. It would be a dream come true to see a Griffon with a Pony on the show.
It’s already confirmed that the three primary pony species can interbreed. But none of the Mane 6 seem to have any mixed heritages. Neither do most secondaries.
Although the Cakes were mentioned to have a vast set of ancestries and have foals of Pony species different to theirs. Both Cake parents are earth ponies.
We have yet to see a mix parentage and their foal(s).

I agree. I thought Rarity’s dad was an Earth Pony when I first saw him too but it was just his hat playing tricks on us.
It would have been nice if they made one of her parents an Earth Pony.
Or Rarity’s dad an earth pony. Wouldn’t it be cool knowing that Rarity could have been a half unicorn?
I would have loved if her mom was Posey. But her canon mother has a flower related cutie mark and has similar colors so she’s close enough even though she’s not an Earth Pony.
And her mom is Posey? If they had made RD’s mom Firefly and AJ’s mom G1 Applejack it would’ve all come full circle.
Interested me, so it was worth noting for someone.

Originally Pinkie was supposed to be a Pegasus named Surprise and Fluttershy an earth pony named Posey.
While the rest of the Mane 6 is the same race as their Pillar counterpart, Pinks and Flutters’ counterparts are the races of their prototypes.
People are pointing out what a coincidence that is.
