and now that you mention luna’s pre-canterlock form, this theory doesnt feel as silly.  
its posible that the rainbow power is what gives those fancy wavy manes.  
(i feel for the animators if thats the case…)

Then again,That image in the S1 opener can be considered artist depiction,but since Luna had two different forms (three if we count Nightmare Moon),fana can use the Pink mare to draw more parallels for the sisters.

The pink mane on Celestia is generally associated with youth or underdeveloped,mostly because it’s used as a parallel to Luna’s S1 look which makes he look younger or depowered so considering that the Celestia and Luna we saw in the flashback were clearly adults (which again raises the question on how old they really are),people can still draw Celestia,specifically foal/filly!Celestia with Pink hair.
