The one question I have about Lucas’ villains is why he gets furious when their somewhat sympathetic backstories lead some people to feeling sorry for them. Why make them tragic if you don’t expect some pity to head their way?

That’s more true in more western style animations or movies. Not always the case, but there are plenty of animes that have the main leads with cool looks, powers, and strengths. Just like my favorite anime, Fairy Tail.
 
As for Star Wars, I’ll have to give you that. The villains usually were more memorable. It’s very much true that you need a good villain to battle against, or else the whole thing feels…kind of hollow in some respect.

Evil will always triumph.  
Why?  
To quote a better villain than I: Because good is dumb.  
The Dark Side gets all the cool powers, gets the best wardrobe, and tend to be the most memorable characters.  
Yeah, you could watch Star Wars for the boring cookie-cutter protagonists. OR you could watch it for the iconic, at once threatening and tragic Darth Vader.
 
Or the delightfully pure evil hammy Machiavellian schemer that is Emperor Palpatine. The one character who is most interesting to watch in the prequels, because of how well thought-out his plan was, and by virtue of being played by Ian McDiarmid clearly having a ball playing this role. Plus, he makes Episode VI a classic in what scenes he has.
 
General Grievous. Just General Grievous. Yeah, I know, not technically a Sith. Don’t care. Such an awesome design, such an impressive fighting style. Guy managed to kill scores of Jedi, without any Force power, just because he was THAT FREAKING GOOD. It would be a disservice not to mention him. Okay, Episode III screwed him up, but if Darth Maul can largely do nothing but stand there looking imposing and doing little else in Episode I and still be a fan favorite from the prequels, dangit, why can’t Grievous, who actually does stuff? Still a cool villain; just not AS cool as he was in the original Clone Wars cartoon.
 
Darth Maul…ehh…he looks cool, I guess? Plus, that double lightsaber is still awesome, even if its impractical as all hell. And the music during that fight was impressive? Okay, point in your favor, I thought Maul stunk as a villain. Looked cool, had a cool weapon, Ray Park can fight real good, but that’s about it. Still, fan favorite of the prequels, so what do I know? Him and Boba Fett. Just goes to show how much a great design and presence can go a long way in redeeming a flimsy character. There’s a reason the saying goes, “A good hero is only as strong as their villain” after all.
 
How about Count Dooku, or Darth Tyranus? You could argue his character doesn’t do much in the movies (again, like Grievous, a character made WAY more interesting in the EU) especially in the shameful way he’s killed off in III. Then again, Sir Christopher frakking Lee. Arguments=invalid.
 
The good guys are supposed to compete with that? Please. The Dark Side gets the cool powers, the cool wardrobe, the memorable dialogue and fighting styles, the best actors–they’re like Disney villains, in the sense that they’re the parts that people always look forward to and secretly root for.
 
In other words: If Darth Dagious has a position available as apprentice, sign me up!  
Also, little known fact. Not only do Sith deal in absolutes, we also deal in ludicrously massive comments on image forums. Which state absolutes.
