Every single same sex ship is 100 times more a crack ship than this is. If you read Caramel’s Light, it projects a believable, logically characterized Caramel.
 
The majority of brony shipping is a joke. This one is not.

Caramel/Twilight can be understood as a stand-in for [Some nice regular pony guy]/Twilight.
 
There just aren’t many males in the show, and those that exist tend to suggest very particular kinds of relationships. Big Mac invites all kinds of quiet country guy/smart city girl imagery and complications with Applejack (and Fluttershy depending on your preference). Spike is like her little brother.
 
Caramel has been seized on as a nameless, faceless male image on which to project any sort of normal relationship the artist or writer might want to imagine.
