Also, why aren’t Luna and Cadence as tall as Celestia or Twilight? Using that logic all Alicorns should be tall like that.
Cuz Celestia and Twi are more important than Luna or Cadence.
Former are supreme leaders and later are just lancers on their side.
Just like Emperor is 4 meters tall and primarchs are just 3 - 3.5.

Like, Chrysalis is in this same picture, and she (and Thorax) are basically like alicorns to the changelings.

True. I have a feeling Alicorns have hormones that naturally slow down their aging process. It certainly doesn’t stop it completely (after 1,000 years you will still feel muscle fatigue much like any human will after 50 years), but you won’t look like you’re aging from the outside.
