Because story, animation, music, character design, and everything else. The yuri really is just a bonus and it is pretty tame like if it wasn’t because of word of God you could pass it as them just being really friendly. And the yuri is honestly is pretty good coping strategy.

They kinda did when they had Rarity kissing Spike a couple times, falling head over heels for Blueblood and Trenderhoof, and constantly make vows to have a prince. A prince being a gug which AJ clearly isn’t. The show is just making these two really close friends.
